Cheese Stuffed Squash Blossom And Fried King Clip Fish


For 7 flowers (squash, zucchini or pumpkin) we need:

for batter:

1 tbs corn starch
1/2 tbs flour
1 egg
3 tbs milk
salt

filling:

100 g of cheese (I used 3 sticks of suluguni)
couple sprigs of thyme, fresh or dried
3-4 cloves of garlic

vegetable oil for frying



Wash each flower thoroughly under running water (there are might be insects inside), drain with paper towel. Handle gently because the flowers are very delicate. 


Grate cheese and garlic, chop thyme, mix together and carefully fill each flower. Slightly twist petal edges, so cheese doesn't spill during frying.



Mix together all ingredients for batter. Heat the oil in the wok or pan for dipfrying. 

Dip in batter each flower and quickly, within a few seconds fry them on both sides. Put on paper towel to remove excess fat.


Could be served both immediately or chilled. You can use any white sauce, mayo or hollandes, I used sour cream and that was perfect )))


As for fish, it was washed, any fins were cut, and then fish was marinated with spices for a few minutes. I used coriander, allspice, salt, ground bay leaves and ground nutmeg, dried onion, black pepper,dried ginger, lemon zest. Then I dip fish into the batter and fried it on the both sides.
